The name "El Jimador" stands for the Mexican farm labourers who are responsible for the agave harvest. The task of identifying ripe agaves after several years of growth and then preparing them for the production of mezcal and tequila is more difficult than one might initially assume. The jimadores cut off the leaves and remove the agave hearts, which can weigh up to 80kg, which are then boiled, crushed and pressed to release the sugar and juice they contain. This is followed by the familiar steps of fermentation and distillation. As a typical "Blanco", this tequila is not aged like its older counterparts.
