Aromatic mushroom risotto for two.
Ingredients from the bundle:
120 g risotto
250 g mushrooms
2 shallots
50 g butter
80 ml white wine
400 ml vegetable stock
Parmesan cheese

Kitchen must haves:
2 tablespoons olive oil
Salt & pepper

- Wash and slice mushrooms and chop a shallot into fine pieces.
- Heat olive oil in a pan and sauté mushrooms for 10 minutes.
- In another pan, sauté shallots in butter, add risotto and mix in.
- Deglaze risotto and shallots with white wine and gradually add vegetable stock. Simmer risotto gently for at least 20 minutes, stirring constantly.
- When the risotto is ready, mix in the sautéed mushrooms and Parmesan cheese and the dish can be served.
